My first results from Vegan with a Vengeance
Carrot-raisin muffins
These are really rather delicious. I guess you could make some icing if you really wanted to, but they are great on their own. I have put them in the freezer to extract one by one for my packed lunches. Fairly healthy too as home baking goes. While baking them, I snuck another butternut squash in the bottom of the oven, so watch this space to find out what happens to that. It’s so secret I don’t even know yet!












I heard a little song when I read the title of your post. Those muffins are pretty yum.
I have to try those muffins. Everybody is talking about them. I like to do the roast a yam/potato/etc while baking other things too.
very cute, I must start sneaking butternut squashes into the oven bottom while they’re still in the market!
I’ve sneaked one into my lunch bag. Oops, I’d better get to work!
