Winter breakfast ideas

A while ago, I wrote about some ideas for breakfast. I love breakfast, I can’t imagine that so many people go without it. How can you expect to run your engine on empty? Anyway, here are some more ideas that have those cold, dark mornings in mind, and best of all they are all pretty quick and easy to do.
- Porridge. Oats are slow to digest, releasing energy throughout the morning. I make mine with equal amounts soya milk and porridge oats. You can either microwave* or cook your porridge in a pan. Tip: if you’re using a pan, leave the pan to soak while you enjoy your breakfast. You can add dried fruit, my favourite is prunes, as they are high in dietary fibre and iron.
- Home made hot almond milk. Soak the almonds overnight. Blend with water and heat up. Add sugar/cinnamon to taste.
- Baked apple. Take the core out, replace with dried fruits and nuts of your choice and microwave for 1.30 - 2 mins (depending on your microwave)
- Hot spicy apple juice - heat up some apple juice and add a pinch of ginger and cinnamon. If you can squeeze your own juice, even better.
- Scrambled tofu - sauté a few mushrooms and a crushed clove of garlic and add some mashed up firm tofu. You can add a little yeast extract to taste. Great on wholemeal toast.
- Fried banana - warning, this is quite calorific, so don’t have it every day. Just slice a banana lengthways and fry in a little sunflower oil. Serve with fresh bread. Yummy!
- Hot fruit compote - heat some dried apricots, prunes and figs with a little orange juice. Add cinnamon to taste.
- Black Treacle Latte. Heat up soya milk. Add 1tsp black treacle (molasses). Stir and enjoy!
*If using a microwave, check the power and always err on the side of caution. Porridge explosions are not good!











These are some great ideas! My husband and I have porridge most weekdays. Leftover grains (rice, quinoa, millet, etc.) are a great addition, too - just add a couple tablespoons of rolled oats and some liquid (I’m liking hemp milk these days, or juice) and simmer.
Porridge explosions are so hard to clean up off the microwave plate too, especially if you forget about them until the following morning, not that I would of course, purely a hypothetical musing!
I love breakfast though, couldn’t do with it. And second breakfast too of course!
Scrambled tofu Rocks! Add some potato, wrap in a tortilla and it is the best!
I hate oatmeal plain ;-(. But I love love love it when it has fresh fruit (chopped apple for example), cinnamon, agave or maple syrup (optional), granola, nuts on top. I’m not talking about just one of these things, but all at once. There was a place called healty hedon in Seattle that had a great oatmeal bar where they had tons of fixins to add.
I’m sure savory things in oatmeal would be good too. Maybe roasted veggies.
I also like bran muffins in the morning. How it all Vegan has a great bran muffin - “make ya go muffins”. I add dried fruit to mine and use soymilk instead of water.
