Cheese-Fest!

While on the rowing machine at the Gym this afternoon, the thought of sitting down to eat this (guilt-free!) kept me going. I like cheese, but I don’t usually go crazy for it. This recipe is an exception, and if I go vegan will be one of the things I would miss. Without further ado, I give you:
Rainbow Macaroni Cheese
Serves two hungry people, or 4 if served with a large salad.
What I did….
Put 200g dried macaroni into the bottom of a shallow dish.
Chopped half a red pepper and yellow pepper and added to dish. Added about half a head of broccoli, and a small red onion, chopped.
Then I made a cheese sauce, using a white sauce (see Delia Smith’s recipe) and adding about 100g grated cheddar cheese.
Poured the sauce over the pasta and veg. Sprinkled some more grated cheese on the top (it is still gorgeous even if you don’t do this). Baked in an oven at Gas mark 6 / 200C for a good half hour.
The peppers taste ludicrously good in this dish!
